Blackened cod

I saw blackened cod on the menu and ordered it. This was at the Rochester wine bar in Rochester Row, London SW1. Blackened cod is so nice that it’s a reliable standby. I first tried it at Nobu (photo), where it is their signature dish, and rightly so. I’ve never found anywhere better. It’s not that complicated. The cod is marinated in sweet miso and then oven baked. Jamie Oliver recommends a mixture of honey, miso paste and saki or white wine, plus giner, red chilli and lemon grass. The cod should be soft and delicate within, but with a crust that captivates the taste buds. Nobu, by the way, was the first Asian restaurant in London to win a Michelin star. It’s also very stylish, and full of affluent youngsters of every nationality. If you try it, don’t miss out on the blackened cod.
