I like to keep a packet of smoked salmon in the fridge, to pick at over the course of the week. It never ceases to amaze me how a few bites of the stuff with a glass of milk can fill me up at breakfast and keep me going through the afternoon. Oh, the wonders of protein and fat.

This morning I took a bit more smoked salmon, and a bit more time with it (usually I eat it before rushing out the door, stood over the kitchen counter. Bad habit, I know.). I sat down with a plate of the stuff, with a dollop of crème fraîche and lots of freshly ground black pepper on top. Slivers of cornichons or the salty flower buds called capers would have gone well, too, but I wasn’t in a mood for anything too acidic (and anyway didn’t have any in the house). Writing this, I realise what was really missing: very finely chopped shallots.
