Simple coq au vin

I was intrigued by Madsen’s article on home cooking. Whilst I quite like the six dishes listed (except for mashed potato), it doesn’t take much effort to make them more exciting. One dish I make quite frequently is a simplified version of coq au vin, and it takes less than ten minutes.

I take a chicken breast and fry it in olive oil. In another pan I heat 50ml of water, add half a stock cube, a dash of red wine, chopped red onion and mushroom and a bit of flour dissolved in water to thicken. A sprinkling of mixed herbs, and it’s done. It’s pretty healthy and quite filling. Nothing to it really.
