A Saturday afternoon cooking

On Saturday evening we had some old friends over to supper. With the weather not knowing what it was doing my little helper and I decided that we would cook something that could be eaten in the garden or the kitchen. Eventually the garden idea was, yet again, abandoned!

We decided to make quiche for the main course. Due to a lack of time the short crust pastry was bought from Sainsburys. We lined the quiche tin with the pastry and blind baked it at 200oC for 25 minutes. While doing this we fried diced onions and smoked bacon pieces and chopped tomatos. When the pastry case was cooked we scattered in these ingredients and filled with a mixture of four eggs, 100mls of milk and 200mils of double cream, seasoned well. This was then cooked at a reduced heat of 160oC for 30 to 35 minutes.

We served this with new potatos and a salad of chopped tomatos, avocado and red onion with an olive oil and white wine vinegar dressing. This worked well with a very cold crisp white wine and a good evening was had by all.
