Madsen’s Parliament salad

I call it Parliament salad because it’s full of nuts.  I started by chopping lettuce and spring onions into a salad bowl, then added Vittoria cherry vine tomatoes.  Next came green and black olives, two boiled eggs and chopped anchovies.  I put in pieces of Feta and Austrian smoked cheese.

 

Then came the nuts.  There were pine nuts, chopped walnuts, chopped mixed nuts, and pumpkin seeds.  I tossed them in with the rest, then added a balsamic vinegar and extra virgin oil dressing with Italian mixed herbs.  The result was a salad which was wholesome and good for you, and very pleasant, too.  Obviously I’m going to have to call it something else…
