As sure as eggs is eggs

Eggs, I assure you, are not interchangeable. Tesco Value eggs – whilst cheap – are crap. They’re small, they taste of nothing, and their yolks are a pale and insignificant colour.
Clarence Court seem to realise that. They specialise in older – and hence more unusual – breeds. I’m a particular fan of their Burford Brown. The eggs themselves are a dark brown in colour, as the name seems to suggest, but it’s the yolks that I like the most. They vary, as one might expect, from a rich golden yellow to a dark and warming orange. It seems a waste to do anything other than boil or poach them…
I’m looking forward, however, to mid April – when the Pheasant eggs become available, along with other seasonal treats… I’ll report back on these another time…
