Pan-fried salmon with sweet potato

I diced a sweet potato and boiled it, skin on, for 15 minutes until tender. In the mean time, I heated a non-stick pan and added a defrosted fillet of salmon. It took about 5 minutes on each side, with a minute or so on the opposite faces to add a little colour.
In with the sweet potato went broccoli and rings of leek for a minute or two to cook through. Onto the plate went the drained potatoes and vegetables, and on top went the salmon. It was a simple and quick supper, and very tasty.
