Lamb sandwiches

Of course a joint one day often provides the leftover for sandwiches the next day. In this case it was lamb. I sliced it with an electric knife, and put it on wholemeal bread on which I’d put sunflower spread. The lamb went on one side on top of mint jelly. On the other side went a mixed salt and pepper seasoning. Cold lamb seems to need salt a lot more than does hot lamb – indeed, I find the same is true for most meats. I made four nice sandwiches and ate three of them for lunch.
