Dried fruit

I am used to the kinds of dried fruit that are common in the UK. In addition to the obviously popular ones like currants and raisins, I regularly see dried apricot, figs and bananas. Rather more varieties feature in things such as ‘trail mix.’ But I was surprised by the display on a market stall in Nice, in the main city market at the foot of the castle hill. Dried mango, yes. But also dried pears, dried cranberries and dried strawberries. There was a dried version of just abut everything, and it set me wondering what sort of dishes I might concoct to make use of them.
