Seabass

The seabass is what we used to call bass, a fish found in and around Europe’s estuaries, coastal waters and rivers.  Scientifically it is called Dicentrarchus labrax because of its two dorsal fins.  It is quite a delicate fish, now popular in restaurants.  I ate some at the Loose Box on London’s Horseferry Road.  For a reason I have never quite fathomed, it is traditionally served skin side up, unlike most other fish which are served skin side down.  While you can eat the skin, I tend not to.  I cook it myself sometimes, either pan-fried or baked.  This one came sitting on a pile of chopped fresh greens, which is also quite traditional.
