Early Shrove Tuesday

I won’t be back in Britain on Shrove Tuesday to make pancakes. Traditionally it’s a way of using up fats and eggs and luxury items before the Lenten fast begins on Ash Wednesday. I usually make (and toss) crepes. However, finding myself in Nicaragua, andf breakfasting on the beach at the Iguana Bar, which has excellent wifi, I spotted pancakes on the menu and decided to do pancaske Tuesday early. These were American-style pancakes, soft, thick and spongey. I really must learn how to make these. I ate them with butter and maple syrup, and listened to the waves rolling in on the nearby shore..
