Pineapple lattice tart at Managua airport

I had a short time at Managua to grab a quick bite before catching a plane to Mexico City via San Salvador.  From Mexico City there is a direct flight to London, so I can do the trip there and back without having to go through a US airport.  I enjoyed the airport’s free wifi while I had a black coffee and a pineapple lattice tart, which was rather better than I’d expected.  Indeed, I’m rather tempted to have a go at making my own version of it after I return.
