quick salad

I’d been to the cinema and left needing lunch so went home via M&S where I picked up a box of prawns and some rocket to add to the avocado at home.

I cubed the avocado, mixed with the prawns, rocket and pine nuts then prepared a very tiny amount of vinaigrette; olive oil, squeeze of lemon, balsamic vinegar, salt and pepper. Threw the dressing over the salad, mixed it around, served on a plate with a little bit of rocket on top and a further scattering of pine nuts.

It was a really delicious and, importantly, filling salad.
