A simple cheese soufflé

I took this recipe off the internet and made it for lunch. I melted 30g of butter and added 3 level tablespoons of flour. When it stirred together I slowly stirred in 250ml of milk. When this was nicely mixed I added 200g of grated cheddar and let it simmer on a low heat for 5 minutes
While this was going on I broke and separated 3 eggs, whisking the whites up to a nice froth that formed peaks. I took the pan off the heat and transferred its contents to a bowl, adding the egg yolks. Finally I gently stirred in the whisked egg white, and divided the mixture between 2 pre-greased soufflé dishes.
I baked these in a pre-heated oven for 30 minutes, then served immediately. It was beautifully light and fluffy. Tasty, too!
